As a dietitian, I believe in the joy of eating without rigid rules or guilt. White Chicken Chili is a perfect example of how food can nourish both body and soul. It’s warm, hearty, and full of nutrients, but most importantly, it’s satisfying. Serve it up for a weeknight dinner, a snowy weekend lunch, or whenever you need a little extra comfort in your day.

 

So, grab a spoon, dig in, and let this chili remind you that nourishment comes in many forms—including a delicious bowl of soup.

Instructions

  1. Prepare chicken (cook the chicken however you like. You can use leftover chicken or make it easy and use a rotisserie.) Make sure to shred the chicken – I do this using two forks.
  2. Chop onion, jalapeño, and garlic. Heat olive oil in a large dutch oven, crockpot, or pot on medium/high heat. Add onion and jalapeño. Sauté for 4 minutes. Add in chopped garlic and sauté 30 seconds longer.
  3. Add chicken broth, green chilies, cumin, paprika, garlic, oregano, salt, pepper. Bring mixture just to a boil then reduce heat to medium-low and simmer for 15 minutes.
  4. Drain and rinse beans in a fine mesh strainer or colander. Add them to the dutch oven.
  5. Add in the cream cheese (alternatively, add in extra milk or skip this for a less creamy soup).
  6. Keep the mixture on simmer and make sure the sour cream is spreading in.
  7. Add in cooked chicken. Add milk last. Mix well. Let the mixture return to a simmer. Add in corn.
  8. Top with tortilla chips and (optional) green onion. Enjoy!

  • 1 serving tortilla chips
  • 113g chicken breast
  • 1 cup chicken breast
  • Salt
  • Pepper
  • ½ tsp cumin
  • 2 tbsp fire-roasted diced green chilies
  • ½ cup milk
  • 1oz cream cheese
  • 1 tsp olive oil
  • 43g cannellini beans 
  • ⅓ yellow onion
  • ¼ tsp oregano
  • ¼ tsp paprika
  • 2 garlic cloves
