Instructions

Yield: 16 Balls

  1. Add carrots to a food processor and pulse a few times until finely chopped. Set aside in a bowl.
  2. In the same food processor, add hemp hearts, ginger, cinnamon, walnuts, oats, and shredded coconut. Pulse until a fine, flour-like texture forms.
  3. Add almond butter, vanilla extract, maple syrup, dates, and pulsed carrot. Pulse until a sticky dough forms.
  4. Roll dough into balls then in additional shredded coconut if desired.
  5. Refrigerate for 15 minutes to firm up (optional, but recommended).

 

Storage:

  • Fridge: up to 1 week
  • Freezer: up to 6 months

  • 1 cup chopped and peeled carrot
  • 1 tbsp maple syrup (or sweetener of choice)
  • 1 cup rolled oats
  • 1/8 tsp powdered ginger
  • 10 Medjool dates, pitted
  • 1/2 cup walnuts
  • 1/4 cup almond butter
  • 2/3 cup unsweetened shredded coconut (plus more for rolling)
  • 2 tsp cinnamon
