This is one of my favorite recipes to add into meal prep because it includes:

Your body doesn’t need punishment after the holidays; it needs nourishment. Meals like this pasta salad support your body by providing adequate macronutrients and micronutrients, helping stabilize energy, blood sugar, and fullness. Rather than chasing perfection or rigid rules, focusing on balanced meals can feel more sustainable and a lot more enjoyable.

Instructions
Yield: 3 Servings
- Add all base ingredients to a large bowl to combine.
- Combine the dressing ingredients.
- Pour dressing over base mixture and combine.
- Store in the fridge for up to four days.
Ingredients
- 2 cups cooked pasta (I used rotini)
- 1 1/2 cups cooked chicken breast, shredded
- 1 cup canned black beans, drained and rinsed
- 1 cup canned or frozen corn
- 1/3 cup diced red onion
- 1/4 cup chopped cilantro
- Optional additions:
- diced peppers
- shredded cheese
- Dressing:
- 1/2 cup plain greek yogurt
- 1/4 cup BBQ sauce
- 2 TBSP mayo
- Salt and Pepper to taste
