Slow Cooker Asian Chicken Lettuce Wraps: A Balanced and Satiating Meal

Instructions

  1. Place ground chicken and garlic in a large microwave safe bowl and microwave for ~5-6 minutes, stirring occasionally until chicken is no longer pink. Drain off liquid and add to slow cooker.
  2. Add bell pepper, onion, hoisin sauce, soy sauce, salt, and pepper, and stir to combine. Cover and cook on low for 2-3 hours.
  3. Stir in water chestnuts, cooked rice, green onion, red pepper flakes, rice vinegar and sesame oil. Season with salt and pepper as needed. Serve filling on lettuce bed and top with optional toppings of choice.
